of the Gods Festival Tour: Exploring the Traditional Cuisines of
Oaxaca
| The high fertile tropical
valleys of Oaxaca nurtured isolated cultures and supplied them with
an abundance and variety of culinary ingredients. Developed and
preserved over centuries, the unique flavors of Oaxaca have gained
worldwide attention for their bold and spicy offerings. |
|
The region that is now Oaxaca provided the first
shipment of chocolate to European consumers shortly after the
discovery of the new world. Chocolate had long been a popular
ingredient in the local cuisine and continues to be incorporated in
Oaxacan dishes today. Chocolate was regarded by the indigenous cultures as
food of the gods. - Tom Penick

Food & Wine magazine says, "The choice eating event of the month is
the Food of the Gods Festival in Oaxaca offering México's best cuisine."
Gourmet Magazine says, "The path to the real Oaxaca runs through its
markets and kitchens".
Some comments from participants:
"The guides and instructors were wonderful! - made the
stories of the area come alive. Their knowledge of history and love of
their heritage really showed. Also their candor & sense of humor. I
really appreciated the friendliness of the people, the excellent scope
of shopping and just the general sense of history and pride in heritage.
Loved it. Music all over. Polite men (what a treat)."
"I would highly recommend the festival; it was a wonderful
experience. Everything; music, food, people, folk art, markets, ruins.
It's a great way to get an inside view of Oaxacan cooking and culture.
Sign up for cooking classes and enjoy the tranquil setting and great
locals. I had a wonderful time. I felt safe. The town is very clean. I
can't wait to return."
"I really liked the fact that everything had a kind of independent
feel to it. Not overly structured and with plenty of free time. I really
enjoyed the variety and flexibility of the festival events. Your guides
were all knowledgeable and very pleasant."
"Muchos Kudos on the Food of the Gods program. We enjoyed ourselves
every so much, as did our friends who came with us..... Again, I can't
tell you how much I enjoyed the trip, and this was not my first trip to
Oaxaca. I'm suffering real salsa and Margarita deprivation so I guess I
better put all those chiles and chocolate I brought home to good use."
